Named one of the Top 100 Whiskey Bars in America, Citizen Public House & Oyster Bar is a modern neighborhood tavern located behind Fenway Park. Our menu is a fresh twist on Tavern Cuisine, while the bar program features craft cocktails, world-class wines, and a selection of more than 400 whiskeys, including hand-selected single barrels crafted just for Citizen. We are also home to Boston’s first whole pig roast, a family-style dinner for 10+ that starts with a local raw bar. Citizen Public House & Oyster Bar opened in 2010 as part of the Franklin Restaurant Group that also includes Franklin Cafe of the South End.
Responsibilities:
The Executive Sous Chef / Kitchen Manager will manage the BOH team.
- Help craft new seasonal menus, working with Chef owners directly
- Create Daily specials
- Training / Coaching the Kitchen team. Must uphold consistency and standards
- Administrative
- Food Cost control
- Ordering
- Inventory control
- Scheduling / Payroll related control
- Hiring, team building
- Oversee service to assure BOH & FOH work together & quality of the food and timing are executed at a high standard
- Work Hand’s-on during service
- Troubleshoot general daily issues with orders, equipment, and staffing
- Maintaining cleanliness of any BOH work areas, including and not limited to refrigeration, cooking equipment, and prep areas
Skills and Requirements:
We are looking for a professional with solid cooking technique and current food safety and sanitation knowledge. Who is positive, has a “yes we can” attitude toward the guest, is mature, even tempered, has grace under pressure, is passionate, knowledgeable & creative with food, is very organized, detail oriented and can keep costs under control.
- 2+ years of high volume line cooking experience
- Administrative experience
- Must be able to work later night shifts
