Do you pine for pork? Ogling the other white meat? Counting down the days till Cochon 555? Fret not, there’s a panoply of porcine deliciousness heading your way – the James Beard House is holding an epic celebration of heritage pork on Friday, January 20th. Presented by Cochon 555 founder Brady Lowe, the porky extravaganza will feature six chefs, including noted nose to tail enthusiast Jamie Bissonnette (Toro and Coppa) and the thrice crowned Prince of Porc Matt Jennings (Farmstead), each cooking a different cut of the heritage pig. And, to wash it all down, each course will be paired with an offering from Champagne Laurent-Perrier. Dinner costs $170 per person ($130 for JBF members) and begins at 7:00pm – book your seat online.
