It is the height of asparagus season right now and your friends at Forage in Cambridge have a special late spring dinner planned to celebrate the mighty spears. Join chef Eric Cooper and front-of-the-house guru Stan Hilbert and their team on Tuesday, June 7th for six courses of asparagus appreciation (or seven if you opt for the extra cheese course) all paired with the sorts of small-production, non-interventionist, natural wines they like to source for their ongoing weekly wine dinners.

Go for omnivore dishes like braised asparagus with asparagus-cured lamb bacon, and braised short ribs with steamed asparagus; or go vegetarian for courses like charred asparagus with parmesan oil, ramp salt and spruce tips, and braised beets with steamed asparagus. Plus everyone finishes strong with an asparagus crème brûlée with pecan sablé. Check out the full menu with pairings below. Each asparagus iteration and other accompanying ingredients will be super fresh — probably even picked the day of your dinner — as the Forage team specializes in cooking seasonally with ingredients from a roster of trusted local farmers and producers.
