Head to 80 Thoreau before the holidays for a weekly three-day dinner series featuring Pete and Jen’s Backyard Birds. Pete and Jen are a local couple who moved to Concord in 2003 with the goal of growing all their own food, and after a successful trial run with laying hens moved into raising chickens and pigs for meat. Chef Carolyn Johnson will be preparing the humanely-raised birds three ways: on Tuesdays, try the risotto-stuffed breast with pumpkin, carnaroli and pecorino. Wednesday features red wine-braised thighs with mushrooms, bacon and biscuits, and Thursdays scale it down for a chicken appetizer—crispy confit brik roll made with potatoes, cabbage and zhoug (a hot chile sauce). The series lasts from Tuesday, December 1st through Thursday, December 17th, with reservations available by phone at 978.318.0008.
