Forgotten Flavors from Garden at the Cellar

A big supporter of all things sustainable, Will Gilson will throw open the doors to his Garden at the Cellar on Monday, August 23rd for the first RAFT Heirloom Harvest Dinner. An off-shoot of the collaboration between Slow Food and Chefs Collaborative, the Renewing America’s Food Traditions program focuses on the rescue of nearly long-gone varieties of produce from the brink of extinction by willing local farmers. Doing his part to keep the dream alive, Gilson will take said produce and craft a sumptuous four-course meal chock full of flavors not tasted for some time, while farmers and Chefs Collaborative folks give you a little primer on the evening’s star ingredients. The responsibly delicious evening, which costs $65 per person including tax and gratuity (but not drinks), runs from 6:00 to 9:00pm.
