Mare Minimizes Its Environmental Impact

The team at Mare takes their environmentally-friendly leanings to the next level, adding a boatload of sustainable fish and shellfish to their all-natural, coastal Italian menu. Teaming up with international purveyors whose farming and fishing methods are designed to preserve long-term viability of marine life populations, chef Francesco Martini highlights the catch is courses like Scottish Gigha halibut in a sea urchin guazzetto with fregola and cockles; and Texas striped bass with cippolini, baby turnips and dragon tongue beans in a blood orange compote. Book a table anytime from 5:00-11:00pm Tuesday through Sunday to try other environmentally responsible forms of seafood from around the world – Suzuki from Australia, Laughing Bird shrimp from Belize and Loch-Duart salmon from Scotland.
