The Harvest Review Fowl Ball Dinner

The Harvest Review is back in action – chef Keith Pooler and company host another installation of their popular tasting series on Wednesday, October 19th when Steven Bibula of Sunrise Acres Farm in Cumberland, Maine joins them for the Fowl Ball. With the help of his three sous chefs, Pooler has put together a menu of fowl-focused courses like chicken noodle soup with homemade chicken broth, grandma’s noodles, baby carrots and savoy cabbage; chilled poached poussin with cauliflower, tarragon mayonnaise and pistachios; ham and sage braised thighs with garlicky polenta; and Tahitian vanilla custard with a meringue cookie. The monthly tasting series, which celebrates local products, growers and purveyors, costs $39 per person including paired wines selected by wine director Jason Irving.
