Chef Andy Whatley has crafted some delectable renditions like the mojo duck taco with guajillo, red cabbage slaw, plantains and duck crackling, the carne taco with grilled tenderloin, onion, radish and cilantro topped with chimichurri and the Yucatán chicken taco with sofrito, smoked avo puree and jicama.
