Providence chef Ralph Conte heads to the James Beard House with Riccardo Cotarella of Falesco Wines in Lazio, Italy for a Winemaker Dinner on Tuesday, November 11th. On the menu for the evening: pastry-wrapped fig with gorgonzola, prosciutto and ginger-pear sauce; broccoli rabe and sweet sausage ravioli with browned garlic-cannellini sauce; porcini-crusted dorado with tomato-fennel ragout; braised veal riblet with lemon ricotta dumplings and a spicy vegetable terrine; and chocolate hazelnut torte with amarena cherries and brandy cream.
