Most of us have heard of terroir—the relationship between a wine’s home turf and its flavors—but fewer are familiar with its bivalve equivalent. Merroir describes the link between an oyster’s origin and its taste and texture, and on Tuesday, September 11th, Formaggio Kitchen is taking you on a deep dive to find out all about it. Join guest oyster-expert Pete from Island Creek Oysters to taste the differences between a number of oyster species from all over the map while Formaggio’s wine buyer Megan pours paired wines for a little merroir/terroir combo.
