On Saturday, March 28, the Fairmont Battery Wharf will, in support of the issues surrounding climate change, participate in World Wildlife Fund’s Earth Hour, turning off all of their lights from 8:30pm to 9:30pm. Don’t think, however, this means you’ll be stuck sitting around in the dark with nothing to do – on the contrary, their signature restaurant Sensing will be offering diners a special raw food menu served by candlelight. Chef de cuisine Gerard Barbin will be preparing baby leaf salad with thin herbs, shaved vegetables, and roasted rice vinegar dressing; tuna tartar seasoned with sweet chili sauce, cucumber, and tofu; and a dessert of minestrone of fresh fruits. This meal is available a la carte or as a three-course prix fixe for $55 per person. Additionally, the Fairmont will be offering a special Lights Out package from $259 which includes accommodation, complimentary parking for hybrid cars and an invitation to the candlelight Earth Hour toast in the Lobby.
