NY Strip with Citrus Cointreau Glaze
2 Tbsp clarified butter
8 oz Prime New York strip
4 oz Cauliflower puree
8 Tbsp unsalted butter diced cold (Save 4 Tbsp for finishing puree)
1 Head cauliflower cut into 1-inch pieces
1 qt heavy cream
Salt and white pepper to taste
4 Charred cipollini onion
4 Grilled king trumpet mushroom
4 Baby turnip
0.5 Cup Cointreau citrus glaze
2 Tbsp Cointreau
1 Tbsp canola oil
1 Tbsp minced ginger
2 Tbsp sambal chili paste
3 Tbsp black vinegar (Chinkiang)
0.5 Cup soy sauce
1.25 Cup maple syrup
0.75 Cup corn syrup

Buttersworth Old Fashioned Cocktail
1.5 oz brown butter bourbon
4 oz unsalted butter
2 Cups Bourbon
0.5 oz Cointreau
0.5 oz maple syrup
2 Dashes Hella bitters
1 Large cube of ice
1 Orange twist garnish
