Basque Culinary Center Chefs Pop Up at Pagu

Chef Tracy Chang likes to keep one foot rooted in Japanese culinary culture and another in the realm of Spanish tapas, but from now through the next six months her Cambridge restaurant Pagu will be leaning hard into their Spanish roots with a pop-up series featuring multiple chefs from the Basque Culinary Center in Spain.

Keep an eye out for a whole slew of events in the coming months that will include four of the famed culinary academy’s chef instructors, like cooking classes where you can learn to make squid ink pizza, giant palleas, the art of pintxos and cooking over open-fire grills. These chefs have worked at some of the world’s 50 best restaurants like El Celler de Can Roca, DiverXO, Alchemist, Compartir and Disfrutar, and you’d be bonkers not to jump at the chance to work with them side by side. There will also be a smattering of special dinners ranging from omakase to dim sum.
