Fall Cooking Class Schedule from Sofra

The award-winning mavens of Mediterranean cuisine at Oleana and Sofra – that’d be Ana Sortun and Maura Kilpatrick – are sharing some of their secrets in their fall cooking class series. Sign on for one (or all) to learn all their tricks and to spend a Monday evening enjoying the fruits of their (and your) labor. Are you looking to learn the ins and owns of preserving? Monday, September 24thJammin’ & Picklin’
Chef Maura Kilpatrick and pickle-geek Janice Goldsmith will show you how jams and pickles can have you enjoying vegetables and fruits long after their growing season is over. Recipes include Pumpkin Jam, Pear Butter, and Apple Marmalade as well as Bread & Butter Pickles, Corn Relish, and other inspired, tangy, crunchy condiments.

Join local author Amy Traverso for a tour through the pages of her fabulous cookbook all about apples! Amy will be preparing several recipes with Chef Ana Sortun, sharing stories and inspirations, and answering all of your burning questions about this fall favorite. Monday, October 29thBreaking the Rules
First you learn about the classics, and then you can learn how to break the rules. Pastry Chef Maura Kilpatrick turns classic brioche into Tahini Brioche and then into Twice Baked Sesame Rolls and demystifies Chocolate Olive Oil Truffles with Chocolate Panko Coating, M’hencha and Pistachio Olive Oil Cake, too.
