On Saturday, January 12th, get a double-dose of umami at Commonwealth’s first koji class of 2019. In this two-part tutorial you’ll learn all about koji, from making your own to using it to add depth to a number of dishes when you’re cooking all fancy at home. The morning session will cover basic applications, from an umami marinade to a sweet rice beverage called amazake. You’ll break for an hour for a midday koi-inspired meal (with plenty of vegetarian options), then dive back in to learn how to grow your own koji at home (that’s right—it’s alive!).
