Happy Fifteenth Anniversary to Clio

Tonight’s the night – Ken Oringer is celebrating fifteen years of exceptional cuisine at Clio by welcoming back an all-star cast of former chefs for a fifteen-course dinner. The event sold out in the blink of an eye (even at $175 per person) and it’s no wonder – with chefs like Sam Gelman, Renae Herzog and Andres Julian Grundy who’ve gone on to work at spots like Momofuku, Marea and L’Atelier de Joel Robuchon, respectively. A couple local toques will be heading to the Back Bay: Tony Maws of Craigie on Main will be whipping up a little pasta with sea urchin and cockscombs while Chris Chung of Aka Bistro will be making abalone sunomono (hon shimeji, pickled ramps, freeze dried shiitake, sukiyaki gelee and tosa bonito powder).

Oringer even welcomes back longtime managers Andrew Holden who currently oversees Kenmore Square behemoth Eastern Standard and Christian Touche who owns and operates Aka Bistro with fellow aforementioned alum Chris Chung. Touche, who was part of the Clio pre-opening team and then General Manager for 13 years, credits his time there with the confidence, experience and integrity with which he runs his own restaurant. Though he’s perfectly happy out in Lincoln, occasionally he misses the weekly trips to Chinatown, where he and Oringer would track down unusual ingredients, bring them back to Clio and experiment.
