Forage Ardèche Dinner

Why scour the new world for new and interesting wines when there is still plenty of ground to cover in the lesser-known regions of France? For the Tuesday, December 6th, wine dinner at Forage, wine guru Stan Hilbert will take you exploring through the Ardèche region, which is named for the Ardèche river (a tributary of the Rhone). The granite-based soils in the western part of the region are ideal for growing gamay, while the other limestone and sandstone soils elsewhere in the valley are perfect for varieties like grenache, syrah, viognier, and even chardonnay, merlot, and pinot noir. Since the region flies under the radar, Ardèche winemakers aren’t pressured by stylistic demands, and the spirit of experimentation is alive and well.

Grab a reservation here for $95 per person to try some of the interesting organic and biodynamic wines of the region paired up with chef Eric Cooper’s imaginative flavors like Brussels Sprouts with cured Calabrian chilis with 2021 Chatus Syramuse, Domaine Salel & Renaud (check out the vegetarian and omnivore menus below).
