He and his wine-loving team have selected some of their favorites to complement super seasonal dishes like vol-au-vent of lobster with morels, peas and spinach puree, and stuffed, bacon-wrapped saddle of rabbit with nettles, grilled ramps and heirloom carrots. The dinner, which starts at 6:15pm, costs $150 per person before tax and gratuity.
