Chef Lydia Shire heads to New York on Thursday, April 29th for a dinner at the James Beard House – not, as you might expect, on behalf of her most recently opened restaurant, Excelsior, but for Locke Ober, the over 125-year-old Boston dining institution that has been under Shire’s supervision since late 2001. A 1992 Beard Award winner herself in the Best Chef Northeast category, Shire will be preparing a menu of live turtle soup with sherry; rum and tobacco smoked salmon; petit salad of dandelion greens with camembert fritters; and rack of pork with its cracklings and lobster sausage.
