Think rosé is the only answer to summer sipping? The folks at Forage would like a word. On Tuesday, June 30th, co-owner and sommelier Stan Hilbert and the crew at Forage are showcasing lighter, brighter reds that shine during the warmer months at their Chilled Red Wine Dinner.
Chef Eric Cooper‘s four-course menu ($125 per person) is designed to accompany bottles from Italy, Germany and France, beginning with a vibrant Teroldego alongside stracciatella with fennel and fresh herbs before moving into a Lemberger paired with shrimp or black bean toast. The meal continues with Aglianico served alongside confit pork belly or sesame-poached tofu, then finishes on a sweet note with angel food cake, macerated rhubarb and Earl Grey whipped cream matched with a fresh Gamay from Savoie.
