There’s a brief window each summer when the bluefin tuna and tomato seasons overlap, and 80 Thoreau is making the most of it with a limited-time Tasting of Bluefin Tuna menu starting on Tuesday, July 21st.
Chef Gavin Lambert‘s four-course tasting showcases three different cuts of locally caught bluefin sourced through Red’s Best, each prepared in a distinct style and paired with the first harvest of tomatoes from Applefield Farm in Stow. Expect dishes like grilled toro tataki with blistered cherry tomato ponzu and black truffle, olive oil-poached tuna loin with roasted plum tomatoes and tonnato and a playful “ribeye” course featuring seared tuna with grilled heirloom tomatoes, fried polenta and kimchi vinaigrette before finishing with a caramelized tomato flan topped with local blueberries.
The tasting menu is $95 per person and will be available through Saturday, August 1st, while bluefin fishing remains strong and the farm’s early tomato harvest lasts.
