Spicy Secrets from Sofra

Sofra

If your spice cabinet could use a little inspiration, Sofra has just the class. On Thursday, July 23rd, executive chef Pri Paige will lead Sofra Spice Pantry, a demonstration-style cooking class focused on the restaurant’s signature spice blends and how to use them to brighten up summer cooking.

Drawing on seasonal vegetables from Siena Farms, Paige will prepare dishes like Persian-style carrots and black-eyed peas, couscous-stuffed peppers scented with ras el hanout and Sofra favorite chicken borani with chard, yogurt sauce and baharat. Along the way, she’ll share the thinking behind Sofra’s house blends (including its dukkah) and offer tips for incorporating them into everyday cooking at home.

Tickets for the educational sesh, which runs from 6:00-8:30 pm, are $140 each and include plenty of tasting throughout the evening, beverages and recipes to take home afterward. You can reserve your spot online and let Sofra do the cooking while you soak up a few new tricks for your own kitchen.
