If you’re the type who measures the start of summer by when striper season begins, 80 Thoreau’s got you covered. From Tuesday, July 7th through Saturday, July 18th, chef Gavin Lambert and the crew are offering a Striped Bass Tasting Menu featuring everyone’s favorite fish prepared three different ways (at least), from delicate dry-aged crudo to a chowder built on smoked bone dashi and perfectly pan-seared fillets.
