One cocktail can do a surprising amount of good. From Friday, June 12th through Sunday, 21st, bars and restaurants across the country will celebrate Bee’s Knees Week, Barr Hill Gin‘s annual campaign supporting pollinator habitats through one of the cocktail world’s most enduring classics.

The concept is simple: order (or make) a Bee’s Knees, post a photo on social media and tag @barrhillgin. For every tagged post, Barr Hill funds one square foot of new pollinator habitat, helping support the bees and other pollinators that make ingredients like honey (and cocktails like the Bee’s Knees) possible. Since the initiative launched in 2017, participants have helped fund more than one million square feet of habitat nationwide.

A number of Greater Boston restaurants are joining the cause this year with their own spins on the drink. At Fallow Kin, the Busy Signal riffs on the classic with roasted leek and ramp greens shochu, hot honey-inspired flavors and a touch of pepper heat, while Fox & the Knife‘s Bee Sting adds spicy honey and amaro Nonino to the mix. Myers + Chang brightens things up with yuzu and soda in the Bee’s Please, and OAK Long Bar + Kitchen pours a version made with a custom Barr Hill Gin distilled exclusively for the restaurant alongside honey sourced from its rooftop hives.

Other participating spots include Russell House Tavern, where The Queen’s Knees incorporates pear liqueur and rosemary syrup; Zocca, whose Vermont Lassi blends Barr Hill Gin with mango nectar, lavender-infused honey and Amargo de Chile; Waverly, where the Berries n Bees adds raspberry liqueur and egg white; and Salt Marsh Winery, where their Bee’s Knees keeps things classic with Barr Hill Gin, lemon and honey.
