Forage‘s most eagerly anticipated seasonal tradition is back on Tuesday, June 9th, with the return of the Asparagus Dinner. Built around one of New England’s fleeting spring pleasures, the four-course meal celebrates locally grown asparagus in all its forms, from preserved asparagus broth with matzo balls to poached monkfish with yellow-eye beans and asparagus-cured egg yolk.
Chef Eric Cooper’s menu takes a decidedly creative turn throughout the evening, weaving the vegetable into nearly every course, including smoked pork loin with pickled asparagus and asparagus toum, plus a baked Hooligan cheese course with fingerlings and raw asparagus. Vegetarian substitutions are available for each course, and guests can add an optional dessert featuring asparagus upside-down cake and asparagus ice cream for an extra $25.
