Forget what you think you know about French wines and head to Forage on Tuesday, May 28th as they explore the region of Jura. The smallest winemaking region in the country is a treasure trove of offbeat and eclectic wines, from oxidative whites made from Savagnin grapes to light, fresh reds made from Poulsard and Trousseau — in other words, just the kinds of wines chef Eric Cooper and wine guru Stan Hilbert are into. Check out this week’s menu below for pairings like Bloomsday Cheddar Tart with Backyard Farm Tomatoes and Caramelized Red Onion Jam matched with 2022 Chardonnay Rose, Tissot; and Braised Beef with Peas, Herby Potato Dumplings and Black Pepper & Strawberry Gastrique paired with 2019 Ploussard, Overnoy-Crinquand.
For $110 you’ll get a lovely four-course dinner with wine pairings (grab reservations here), and depending on the weather you can sit inside the cozy Cambridge dining room or enjoy your evening al fresco on their heated patio. All of the wines poured for dinner will be available to take home for retail prices, so make note of your faves as you sip, or you can talk to Hilbert about saving a case for pickup at his Dedham bottle shop if you’re filling out your cellar.
