Make Chicken Noodle Hot & Sour Soup with Ming Tsai

Blue Dragon’s Ming Tsai is making another appearance on Instagram Live this afternoon, Thursday, April 16th. Pop over to the @PBSFood Instagram account at 3:00pm to catch the chef, restaurant owner, cookbook author, TV host and all-around good dude as he walks watchers through the process of making chicken noodle hot and sour soup. If you think you’ve got what it takes (ingredient- and skill-wise) to cook along with the live action, feel free or just tune in to take it all in (the list of ingredients are below though, just in case you want to give it a shot). Tsai, who’s done a handful of these already, enlists the help of whoever else is home so there are some heartwarming father/son moments on top of all the culinary magic.

Chicken Noodle Hot and Sour Soup
6-8 chicken thighs, bone-in, seasoned
1 pound shiitakes, de-stemmed, sliced
1 large onion, sliced
2 tablespoons minced ginger
1 bunch scallions, thinly sliced, separate green and white parts
1 quart chicken stock
1/2 cup rice vinegar, a touch more if you like it tart
3 tablespoons naturally brewed soy sauce
1-2 tablespoons of your favorite hot sauce
4 cups blanched egg noodles
2 cups packed spinach leaves
1 tablespoon sesame oil
Extra virgin olive oil to cook
Kosher salt and black pepper to taste
