The Professional Pastry Guild of New England Heads to NYC

The five women who head The Professional Pastry Guild, New England’s only organization for pastry chefs, take on The Big Apple on Sunday, March 21st at a unique Spring Brunch at the James Beard House. The ladies, Judy Mattera, currently consulting for Robert Mondavi Wines; Lee Napoli of both Sandrine’s and Dedo; Suzi Park of Wedding Angels; Paige Retus of blu; and Elaine Stella of the Tuscan Grill collaborated on the menu of Vermont chevre tartlets and mini smoked salmon napoleons; chilled cucumber soup in pulled sugar bowl with native crab and apple salad; Great Hill blue cheese and black mission figs with carmenere reduction, served on pecan-raisin toast; poached pear with amaretto praline cream, cranberry sorbet, Tahitian shortbread; and espresso truffles in a chocolate box, served with fresh-brewed coffee.
