Sideways, Turning North at Anthem

On Tuesday, April 19th chefs Robert Fathman, Ben Hennemuth and Jim Grace, Anthem’s talented team of culinary professionals, tip their toques to pinot noirs in Sideways, Turning North: A Pinot Paired Dinner for Wine Enthusiasts. The trio pairs Northern Oregon’s award winning wines with four typically capricious spring dishes like smoked salmon rangoon with poached pear salsa and citrus gastrique; stuffed quail with marscapone and fiddlehead fern salad with roasted morels and toasted Oregon hazelnut vinaigrette; braised beef short ribs with crosne and fava bean risotto, and melted leeks; and chevre cheesecake, blackberry port jam and hard cheese.
