On Tuesday, May 11th, Chef Nick Speros joins forces with wine educator and author, Len Presutti, for a specially designed Italian Wine Dinner at 197 East Main in Gloucester. Speros has created a seasonal five-course menu featuring escabeche of fresh native clams; flash seared tuna with zucchini fettuccini, pancetta, tiny tomatoes and basil puree; risotto of slow cooked squab morels, fava beans and pecorino romano; grilled hanger steak with ramps, proscuitto and garlic jus; and baba al rum sweet leavened cake soaked in a rum sauce.
