Spain is all the rage these days and on Monday, March 27th guests at Needham’s Indigo can sip their way through some of the country’s oft-overlooked selections as paired with five Spain-inspired courses from chef Todd Ciampolillo. The evening starts off at 7:00pm with sangria and almendras fritas (that’s fried almonds for the non-Spanish speaking), followed by an assortment of tapas – potato omelet with a tomato vinaigrette; Spanish sausage braised in hard cider with Cabrales cheese; and salt cod fritters topped with saffron aioli, among others. Ciampolillo gets down to business with courses like roasted marinated duck with spinach and chick peas; and Moorish braised lamb with dried fruit and potatoes.
