Blanc Franc Dinner at Perdix

On Tuesday, May 10th chef Tim Partridge pays tribute to the Chenin Blanc and Cabernet Franc grapes in what he’s calling a Blanc Franc Dinner. Both prominent grapes in the Loire Valley region, they’re often under-appreciated in the states – well, not for long, if Partridge has anything to say about it. The evening gets underway with a reception at 6:30pm followed by a five-course dinner at 7:00pm. The menu includes white asparagus salad with lobster studded hollandaise; Coquille St. Jacques a la Nage; a trio of rillettes – duck, pork and rabbit each with their own garnishes; crispy pan-roasted chicken breast with crayfish sauce; and two classic Loire Valley cheeses.
