Om’s Rachel Klein Heads to the Beard House

Om chef Rachel Klein heads back to the Big Apple for a guest appearance at the James Beard House on Tuesday, August 8th. Klein starts the evening off with hors d’oeuvres like foie gras torchon with sweet-and-sour peaches, micro-arugula and macadamia crisp and truffled scallop nigiri with speck and wasabi peas. Some highlights from her menu for the evening: softshell crab with creamed corn, fingerling potatoes, garlic chives, pea shoots and Korean chili vinaigrette; heirloom tomato with grilled manouri cheese, basil seed gelée, and smoked tomato sorbet; Colorado loin of lamb with baby artichokes, picholine olive jam, garlic confit, black olive paint, parmigiano-reggiano cravero riserva, sorrel and coriander emulsion.
