Delphin’s Gourmandise School of Pastry in Marblehead is now enrolling students for their intense 240 hour Pastry Certificate Program. The program starts in early May and offers students an opportunity to hone their pastry skills under the tutelage of master pastry chef Delphin Gomes. On the agenda for the six week long semester: dough with accompanying fillings and creams, followed by an in depth exploration of cakes, mousses, creams and cake decorating techniques. Cookies, petit fours and macaroons are next on the program, followed by holiday items and ultimately chocolate molding and pulled sugar.
