Back to School with Your Favorite Chefs

Head back to school this fall (without dread or angst) with some your favorite area chefs. We’re giving you plenty of time to sign up for these fall semester classes. Seats tend to go fast, so don’t wait.

Dover Sherborne Community Education

On Monday, October 20th from 7:00-9:30pm Ruth Anne Adams returns to the Linquist Commons kitchens to delight students with her easy going teaching style and mouthwatering Mediterranean cuisine. At Casablanca she has treated the menu as an opportunity to expand her Mediterranean repertoire. She plans to showcase some of her favorite fall dishes including: Fig and Blue Cheese Tart with Arugula and Walnuts, Wild Mushroom Risotto Cake stuffed with Fontina Cheese, Seared Skirt Steak Roulade with Roasted Herb Potatoes, and Warm Roasted Apples with Maple Cream and Shortbread. Maison Robert: Classic Cuisine PairingsMaison Robert, known for its traditional French cuisine with contemporary touches, opens its kitchen doors to the public, offering a real behind-the-scenes tour of the comings and goings of a first class kitchen. Chef Ken Duckworth will be on hand to demonstrate some of his personal favorites, including smoked salmon and asparagus terrine and bouillabaisse. Save room for peach-filled crepes, flamed in brandy. Each course will be paired with a carefully selected French wine. The class will be held on Saturday, August 23rd from 11:00am-1:00pm at Maison Robert. A Hands-On Cooking Class with Lumiere’s Michael Leviton – On Tuesday, September 30th from 6:00-9:00pm learn to cook the sunny flavors of Provence from Michael Leviton, chef of West Newton’s Lumiere. Since enrollment is very limited, count on careful guidance from Leviton. You’ll also get to indulge in the dishes you’ve created paired with wines selected by Wesley Finnemore, sine buyer for Lumiere. Tuition is $150 per person. Rustic Kitchen and Rustic Wine with Sandy Block and Bill Bradley – On Wednesday, October 1st from 6:00-8:00pm join acclaimed chef Bill Bradley of Rustic Kitchen and master of wine Sandy Block for a range of Bradley’s Mediterranean-inspired creations with wines specifically chosen to evoke the warm earthy flavors of the sun. Market Tour with Ana Sortun – On Saturday, October 18th from 10:00am-2:00pm, take a guided tour of the Watertown markets that inspire Ana Sortun’s creative menu at Oleana. Learn where to buy packets of Mediterranean spice combinations, olives, grains, nuts, yogurts, pastry, and wines. Chef Sortun will share her expertise with you at these Greek, Armenian, Turkish, and Middle Eastern shops. The tour will be followed by lunch at Casablanca in Harvard Square. A Turkish Night with Ana Sortun and Ihsan Gurdal – Immerse yourself in Turkish culture for the evening with chef Ana Sortun of Oleana and Ihsan Gurdal of Formaggio Kitchen. Gurdal, a native of Turkey, will discuss the culture and cuisine while Sortun prepares a meal of Turkish delicacies paired with traditional Turkish beverages. Tuition is $60 per person. Bistro Cooking at Home with Gordon Hamersley – On Monday, October 27th Chef Gordon Hamersley of Hamersley’s unveils his new book Bistro Cooking at Home, a cookbook filled with sophisticated yet easy to make recipes accompanied by wine recommendations from his wife and wine manager, Fiona Hamersley. Learn about Hamersley’s signature dishes such as wild mushroom and roasted garlic sandwich, as well as his interpretation of bistro classics. The Foods of Northern Italy with Il Capriccio’s Jeannie Rogers & Rich BarronJeannie Rogers and chef Rich Barron, co-owners of Waltham’s acclaimed northern Italian restaurant Il Capriccio will be presenting some of their dishes representing the regions of northern Italy paired with wines from the same regions. Barron will demonstrate some of these dishes and Rogers, one of Boston’s leading wine experts will talk about the wines.
