Named for the horticultural practice of selecting cuttings from the best plants to create something new, Cultivar combines the best of chef-owner Mary Dumont’s culinary experience to create a hyper-seasonal restaurant focused on sustainability and the diversity of local ingredients. Located in the Ames Hotel in Downtown Boston, Cultivar provides an upscale dining experience rooted deeply in the processes of growing and making food.
With an on-site hydroponic garden providing herbs and produce year-round, freshness is never an issue on Cultivar’s constantly changing menu. Ingredients are sourced locally from the most sustainable farms, fisheries, and purveyors, and are presented in a refined, modern style. An in-house bread program and homemade pastas create a nourishing foundation for a restaurant with one foot always planted firmly in the garden.
The drinks seem to spring from the ground as well, with a gin-focused cocktail list showcasing the spirit’s botanical variety and a list of small-batch spirits behind the 12-seat bar. The wine program features small-production winemakers who reflect the restaurant’s focus on sustainability; don’t be surprised to find a number of funky biodynamic offerings from around the world.
The ethos of local sustainability is reflected in the decor as well. The 88-seat dining room features natural materials which create an upscale setting with rustic roots. The space is bright and airy, with clean white walls and royal blue banquettes, and a few accents like a rough-hewn wood bar and branchlike chandeliers tying the atmosphere back to the earth and the menu. With a Japanese moss garden suspended from the ceiling, butcher-block tabletops, Cultivar looks as if it were carved right from the landscape.
The restaurant’s hydroponic garden is the focal point of the 55-seat patio. On the second floor, a private dining space provides a number of options, seating 90, with the ability to split into two distinct rooms or comfortably provide for 140 standing guests. The restaurant is open for breakfast, lunch, and dinner seven days a week.
