- 1 cup roasted garlic
- 1 medium onion, roughly chopped
- 6 roasted red peppers
- 2 pounds oven roasted tomatoes
- 1 tablespoon Chipotle pepper, chopped
- 1 cup red wine vinegar
- 1 cup sherry vinegar
- Place all items in a sauce pan and cook for 15 minutes.
- Remove to blender and blend until smooth.
- Return sauce to pan and simmer for an additional 15 minutes.
- Add salt and pepper to taste.
