Roasted Red Pepper Romesco Sauce

Ingredients

  • 1 cup roasted garlic
  • 1 medium onion, roughly chopped
  • 6 roasted red peppers
  • 2 pounds oven roasted tomatoes
  • 1 tablespoon Chipotle pepper, chopped
  • 1 cup red wine vinegar
  • 1 cup sherry vinegar
  • salt
  • pepper

Directions

  1. Place all items in a sauce pan and cook for 15 minutes.
  2. Remove to blender and blend until smooth.
  3. Return sauce to pan and simmer for an additional 15 minutes.
  4. Add salt and pepper to taste.
