Pesce al Cartoccio con Brodetto

Decadent yet healthy, this seafood dish is a quick and easy way to whip up an impressive meal in no time. Serve with pasta, rice or any carb that strikes your fancy. For larger dinner parties, this recipe can easily be doubled.

Ingredients

  • 8-10 ounce filet salmon
  • 2 ounces baby shrimp
  • 2 ounces calamari, sliced
  • 3 ounces chickpeas
  • 2 ounces peas
  • 6 cherry tomatoes
  • 1 clove garlic, sliced
  • 1 cup tomato water
  • 1/2 fennel bulb, sliced
  • 1/2 cup white wine
  • juice of half a lemon
  • juice of half an orange
  • pinch dried thyme
  • salt and pepper

Directions

  1. Preheat the oven to 450 degrees.
  2. Add a drop of extra virgin olive oil to a non stick pan. Add the fish and all of the other ingredients together and sear for 2 minutes.
  3. Next put everything in a piece of folded aluminum foil. Close the foil to form a packet, place the foil packet on a pan and put in the oven. Cook for ten minutes.
