Avocado Sunshine Salad with Green Goddess Dressing

Ingredients

For the Salad
  • 4 oz Little Leaf Farms Baby Crispy Green Leaf Lettuce
  • 1 avocado, peeled and cut into ½” slices
  • 1 medium watermelon radish, trimmed and sliced thin
  • 1 medium orange, peeled and segmented
For the Dressing
  • 1 cup plain yogurt
  • ½ cup fresh parsley
  • ½ cup fresh dill
  • ¼ cup fresh mint
  • ¼ of an avocado
  • 2 garlic cloves, crushed
  • 1 tsp dijon mustard
  • ¼ extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste
  • NOTE: Use whatever fresh herbs you have on hand. The magic of green goddess dressing is the versatility!

Directions

  • Make Dressing - In a food processor or blender combine all of the ingredients until they are well combined. Season to taste! Leftovers can be stored in a jar in the fridge and used for veggie dipping throughout the week.
  • Assemble - Cover a large platter with Baby Crispy Green Leaf Lettuce, layer on the avocado, watermelon radish, and orange segments. Top with a generous drizzle of green goddess dressing and serve!
