Avocado Sunshine Salad with Green Goddess Dressing

- 4 oz Little Leaf Farms Baby Crispy Green Leaf Lettuce
- 1 avocado, peeled and cut into ½” slices
- 1 medium watermelon radish, trimmed and sliced thin
- 1 medium orange, peeled and segmented
- 1 cup plain yogurt
- ½ cup fresh parsley
- ½ cup fresh dill
- ¼ cup fresh mint
- ¼ of an avocado
- 2 garlic cloves, crushed
- 1 tsp dijon mustard
- ¼ extra virgin olive oil
- 2 tbsp fresh lemon juice
- Salt and pepper to taste
- NOTE: Use whatever fresh herbs you have on hand. The magic of green goddess dressing is the versatility!
Directions
- Make Dressing - In a food processor or blender combine all of the ingredients until they are well combined. Season to taste! Leftovers can be stored in a jar in the fridge and used for veggie dipping throughout the week.
- Assemble - Cover a large platter with Baby Crispy Green Leaf Lettuce, layer on the avocado, watermelon radish, and orange segments. Top with a generous drizzle of green goddess dressing and serve!
