Bedford Gets a Painted Burro

After a year of culinary-genre-bridging pop-ups (combining pizza, tacos, desserts and more) Posto Bedford will soon (like, very soon! Wednesday, September 8th soon!) be transforming into the third outpost of The Painted Burro. Joining the OG Davis Square spot and Waltham location, which opened earlier this year, Painted Burro Bedford will bring the diverse regional cuisines of Mexico (specifically Baja, Oaxaca, Vera Cruz and the Yucatan) to Middlesex County.

Chef-owner Joe Cassinelli and Culinary Director chef Leo Asaro channel their skill with Latin American fare into a menu that uses a modern approach (and local ingredients) to interpret longstanding culinary traditions. Book a table to dive into dishes like shrimp al ajillo, tortas and specialty tacos, or pitchers of your favorite margs or a selection of craft cocktails — their tequila list features more than 100 handpicked bottles. The restaurant will be open Tuesdays-Saturdays from 4:00-8:30pm to start, so keep an eye on their Insta to see what kind of seasonal specials they’re rolling out.
