Beer Meets Salad – An Inspiring Story

Little Leaf + Little Grove

If your go-to dinner move continues to be stuffing a slow cooker and popping a bottle of Syrah or a stout, it may be time to brighten the mood with a little taste of spring. Luckily, local year-round greens grower Little Leaf Farms has collaborated with Maine’s Allagash Brewing Company to create a beer-and-salad pairing that’ll serve as a refreshing reminder that warmer weather is on the horizon — no matter what the groundhog said.

The creative bunch at Allagash have recently channeled their Yankee ingenuity into Little Grove, a boundary-breaking line of fruit-forward, low-cal and low-ABV beers. These effortlessly enjoyable brews — one is made with blackcurrant and the other with peach and kombucha — will give you all the fresh, bubbly, slightly tart, dancing-on-your-tongue vibes you’ve been missing this season.

Inspired by the sassy sessions, the salad experts at Little Leaf Farms came up with a recipe for Soy Peach Glazed Salmon Salad with Ginger Sesame Dressing that pairs perfectly with the vibrant brews. This crisp, fresh salad is chock full of nutrients and antioxidants and comes complete with a punch of bright color, making it a delicious way to rejuvenate your body and soul to beat those cold weather blues.

The aromatic ginger, garlic and orange dressing is grounded by the roasted, earthy crunch of the sesame seeds and the luscious richness of salmon baked with soy and peach preserves. Topped with cucumbers, edamame, radishes, shredded carrots and a dash of rice wine vinegar, the zingy little number perfectly balances salt, fat, acid and heat (Samin Nosrat would be so proud!). Pair this salad with either of Allagash’s Little Grove beers and you’ve really got a treat sure to brighten up even the darkest of days.
