Liz Barwick, Lamb Jam Champ

When the Lamb Jam Tour made its way to Boston back in June — Sarma‘s Liz Barwick beat out 15 other chefs to take the title. Her victory earned her the chance to take on the winners from the other Lamb Jam city stops (Austin, Washington D.C., Denver, Seattle and San Francisco) at the Saveur Magazine Test Kitchen in New York City on Monday, October 7th.

Each chef prepared their winning dish, and the line-up included Smoked Lamb Masa Cake with Mexican Coke Mole from Chef Barrett Black of The Original Black’s Barbecue, Turkish Roasted Lamb Shoulder from Chef Barwick, Spicy Szechuan Lamb Noodles from Chef Dimitri Moshovitis of CAVA, Southwest Lamb with Mole from Chef Brother Luck of Four by Brother Luck, Lamb Belly Tacos with Pistachio Mole from Chef Heong soon Park of Chan and Southern Thai-Style Dry Curry Lamb Ribs from Chef Kitiya Ditpare of TACOTHAI.

Barwick’s Turkish smoked and roasted lamb shoulder presented in a popover-like feta and lamb-fat borek stole the show, and she was named the 2019 National Lamb Jam Champion by thirty members of the NYC food media.
