Smoking Up A Storm in Harvard Sq.

Casablanca, which has been satisfying every Cantabrigian craving for Mediterranean fare since 1977, adds a huge, old-school wood-fired smoker to their already well-equipped kitchen. And, of course, chef Camillo Diaz is already putting his new toy to good use, adding a menu of tapas-sized smoked specialties to his nightly offerings. Among the plates he’s already perfected: Morocco Tacos with smoked, pulled lamb, fried baby chickpeas and charmula; Mediterranean-spiced chicken wings and house-smoked duck legs with parsnip puree, house-smoked bacon, Brussels sprouts, dried fruit and nut compote.
