A few kitchen switches: Former Rialto Executive Sous Chef, Petal Joseph, and Toast, the most recent addition to The Independent family in Union Square, have parted ways. Joseph is currently considering her options and will undoubtedly resurface at another culinary hot spot in the near future. Chef Gabriel Frasca takes the reins at Spire at the Nine Zero Hotel as Executive Chef. Frasca, whose local kitchen time includes stints at Hamersley’s, Chez Henri, Aquitaine Bis and Radius, has planned a menu that will take advantage of autumn produce and fresh, local seafood and meats. Expect entrees like: Maine diver scallops with candy roaster squash, black trumpet mushrooms and lime; and grilled Colorado lamb loin, brussels sprouts, pancetta, sweet potato and chestnut.
