Chef Ana Sortun of Oleana wants to help you spice things up in your kitchen by sending you home with a few flavors from her eastern Mediterranean cooking. Ana and her staff have created “spice boxes” that feature some of Oleana’s most popular seasonings – the ones that set Oleana’s flavors apart and have earned the restaurant and chef countless accolades including two Beard nominations. The spices included are Dukkah, an Egyptian spice mix with nuts; Fish Spice, wild herbs from Armenia perfect for use on any fish or with beans; Aleppo Chiles which are fresh ground red chiles from Aleppo, Syria; Baharat, a Turkish spice mix for meat and Za’atar which is a blend of wild oregano and sesame seeds from Jordan.
