Job Summary:
Via Cannuccia is seeking a skilled and dedicated Sous-Chef de cuisine to join our culinary team. This pivotal role involves supporting the Head/Executive Chef in delivering exquisite Italian cuisine and ensuring the smooth operation of kitchen activities. The ideal candidate will possess a strong background in Italian cooking, excellent organizational skills, and the ability to inspire junior kitchen staff.
Key Responsibilities:
- Assisting the Head/Executive Chef: Collaborate with the Head/Executive Chef in menu planning, recipe development, and executing culinary creations that reflect authentic Italian flavors.
- Kitchen Operations: Oversee daily kitchen activities, including preparation, cooking, and presentation of meals to ensure high-quality standards are consistently met.
- Team Leadership: Supervise, train, and mentor junior kitchen staff, fostering a positive and efficient work environment. Lead by example in maintaining work ethics and discipline.
- Quality Control: Monitor food quality and consistency, ensuring that all dishes meet the restaurant’s standards before they are served to guests.
- Inventory Management: Assist in managing inventory, ordering supplies, and maintaining stock levels, ensuring optimal kitchen operations.
- Health and Safety Compliance: Ensure all kitchen operations adhere to legal safety and sanitation standards, maintaining a clean, organized, and safe workspace.
- Problem-Solving: Address and resolve kitchen-related issues promptly, supporting a seamless dining experience for customers.
Qualifications:
- Proven experience as a Sous-Chef de cuisine or in a similar role, preferably within an Italian cuisine-focused establishment.
- Extensive knowledge of Italian culinary techniques and dishes.
- Strong leadership and team management skills.
- Excellent communication and organizational abilities.
- Ability to handle high-pressure situations and multitask effectively.
- Culinary degree or equivalent professional experience is advantageous.
Working Conditions:
The Sous-Chef de cuisine will work in a dynamic kitchen environment, requiring long hours, including evenings and weekends. This role involves physical activity, standing for long periods.
