The Don’s Barbecue – Prep/Line Cook

The Don’s Barbecue is looking for an ambitious Prep/Line Cook to work in a brand-new barbecue restaurant in Watertown, and assist in the preparation of authentic, Texas Roadside Barbecue. You will perform routine kitchen tasks such as setting up workstations and ingredients, and following exact instruction, so that food can be prepared according to recipes.
A great prep cook will be quick and diligent and willing to improve on the job. You will be able and willing to follow instructions as well as all health and safety rules in the kitchen. The ideal candidate will also be able to function in a fast-paced, busy environment as a part of a team.

Prep Cook Job Responsibilities:
• Perform routine kitchen tasks.
• Follow the prep list created to plan duties.
• Label and stock all ingredients on shelves so they can be organized and easily accessible.
• Measure ingredients and seasonings to be used in cooking.
• Prepare cooking ingredients by washing and chopping vegetables, cutting meat, and other meal prep.
• Set up workstations and ingredients so that food can be prepared according to recipes.
• Undertake basic cooking duties, such as reducing sauces and sauteing food.
• Measure ingredients and seasonings to be used in cooking
• Proper handling of meats
• Daily/weekly cleaning of smoker
• Prepare simple dishes, such as salads and entrees.
• Maintain a clean and orderly kitchen by washing dishes, washing and sanitizing surfaces, and taking out trash.
• Ensure that all food and other items are stored properly.
• Comply with nutrition and sanitation guidelines.
• Perform other kitchen duties as assigned.

Requirements
• Experience as prep cook desired
• Knowledge of health and safety rules in a kitchen
• Manual dexterity able to operate cutting tools and kitchen utensils
• A team player with good communication skills
• Patient with an ability to stay positive under pressure
• Very good physical condition and endurance
• High school diploma or equivalent is desirable; Training from a culinary school will be an asset

Work Hours & Benefits
• Shift work required
– 1st shift 4 AM to 12:30
– 2nd shift 8 AM – 4:30 PM
– 3rd shift 1 PM to 9:30 PM
• 2 fifteen minute breaks per shift + 30 minutes for lunch (off peak times)
• Weekend shifts required (same shifts as above)
• Restaurant is closed 2 weeks a year for vacation and deep cleaning
– If you choose to be a part of the cleaning team you will receive a bonus

Education and Experience Requirements:
