Pemberton Farms – Culinary Director

Pemberton Farms in North Cambridge is an independent specialty grocery store and garden center with a busy gourmet deli and catering department. Pemberton Farms is a team-oriented, customer-focused, fast-paced environment. They are currently seeking an experienced director to oversee kitchen, deli and catering operations. The ideal candidate should be an experienced and natural leader, creative, forward-thinking and passionate about culinary arts and future trends. They will work with the head chef and deli manager to oversee daily production, delegate and connect the food service teams.

Responsibilities Include
Managing all aspects of their kitchen, deli and catering business including but not limited to:

  • Collaborative menu planning and recipes including seasonal and holiday dishes for the deli and catering menus
  • Overseeing and helping maintain consistent food preparation and cooking, proper storage and labeling/dating, and accurate rotations for quality and freshness
  • Creating prep lists and delegating tasks and stations to staff members
  • Operating equipment and machinery
  • Ensuring cleaning and organizing including floors, preparation surfaces, tools, and utensils to ensure workspaces are properly sanitized
  • Ensuring food safety with in depth knowledge of allergens and dietary restrictions and proper certifications
  • Maintaining a visually pleasing deli and grab-n-go case
  • Overseeing proper labeling of items including names, dates, allergens, ingredients, prices
  • Pricing catering, deli and grab-n-go items
  • Buying and controlling kitchen, deli and catering supplies while maintaining a budget, monitoring stock levels
  • Improving sales performance and making tactile decisions based on profit loss analysis and industry trends, creating department goals and sales promotions
  • Controlling and recording food waste
  • Supervising and supporting staff members in the kitchen, prep areas and deli operating counters
  • Providing consistent direction and thorough communication with staff members as kitchen, deli and catering must operate as a team
  • Scheduling staff members, approving timecards and time off requests
  • Interviewing, hiring, training, supervising and motivating staff members
  • Ensuring compliance with company policies
  • Responding to customer and employee requests, questions, complaints
  • Monitoring the quality of guest satisfaction and interacting with customers to enhance guest experience
