Learn from two Jean Georges alum looking for a sous chef who smile in the face of challenge, view criticism as knowledge to grow, and for whom a day in the kitchen with impeccably sourced ingredients is fun, not work. Although fine dining experience is not essential, experience in a professional kitchen is- unless you can somehow convince them otherwise. An obsessive commitment to organization, cleanliness, and keeping a razor sharp knife are imperative. As is honesty, mindfulness, humor, and heart.
