What is PAGU?

PAGU is a Japanese tapas restaurant located in Cambridge’s innovation hub between Central Square and MIT at 310 Mass. Ave by Chef/Owner, Tracy Chang. It is a restaurant and cafe serving breakfast, lunch, and dinner, inspired by Chang’s experiences with O Ya, Le Cordon Bleu Paris, Spanish three-star Michelin Restaurante Martin Berasategui, Guchi’s Midnight Ramen, and Harvard’s Science+Cooking course. The menu highlights local ingredients, with a focus on seafood, celebrating the harmony of techniques and flavors of Japanese and Spanish cuisines.

EXECUTIVE CHEF
They are seeking an organized, reliable, executive chef to lead the back of house team. The appropriate candidate is:

  • a motivating team leader who is respectful of all kinds of people and recognizes how to engage different personalities
  • enthusiastic about improvement and finesse in a high-volume environment (a “how do we make it better” attitude vs. “good enough” attitude)
  • eager to execute the day-to-day BOH operations as well as coordinate events with guest chefs and other collaborators (entrepreneurs, professors, artists, et. al.)
  • physically and emotionally energized to endure long hours (3 meal periods, 7 days a week requires stamina!)

Responsibilities include:

Team
-training/hiring/scheduling BOH team
-developing engaging education programs for BOH / FOH on product, technique, execution
-coordinating with GM and other FOH managers
-recipe development and coordination with chef/owner

Product
-ordering/receiving/inventory
-maintaining food, health, sanitation and safety
-recipe development, portion control, consistent execution, quality control
-expediting

Financials
-maintaining food and waste costs, payroll
-coordinating with GM

Certifications
-CPR certification
-ServSafe certification

Technical
-Microsoft Excel
-Google Drive, Google Docs, Google Sheets, Google Cal
-OpenTable, Quickbooks, POS system
